Grandma Ofelia's Apple Bread

I always knew it was going to be a good day whenever I got home and as soon as I walked through the door I could smell that particular smell, the smell of the apple bread made by my grandma Ofelia, my mother’s mom. If you ask anyone about their grandma’s food they’ll probably tell you that her grandma’s the best, but I can tell you, that no one does the apple bread better than mine. She loves cooking, she’s AGE years old now and even though she’s tired, or even if her knees start hurting she just can’t stop herself from being in the kitchen, it’s what keeps her alive; so who can argue with that? If we are able to, she’ll invite us to come over to her house, she’ll prepare some of our favorite dishes, either Enchiladas Suizas or her exquisite Rice with ALUBIAS and BACALAO with chicken dressed in mole sauce to the side. And after that, she’ll surprise us with her apple bread, which will never go wrong if you have it with a cup of coffee to the side (which is also a family thing; we all love coffee).  And of course, there’s always a big piece for everyone to take home. That’s the good thing about grandmas; they always cook in vast amounts.  My mom even puts it in the freezer, so that the apple bread lasts longer, so that when it’s a special time, or it gets to that point of the day when is coffee time, we can take a piece out and warm it. It’s just that special quality about my grandma, her cooking is done with so much love; you can feel it in each dish. She’s getting older and older each time, and she still treats us as if we were seven year olds, spoiling us with our favorites dishes. One of my aunts is in the process of creating a recipe book, for every single one of the nephews. It will contain all of my grandma’s dish recipes, and of course, the apple bread recipe will be there. It’ll definitely be a treasure for me, is something that will bring me close to here. That clear image of my brother and I, I was probably 8 and he was 6, entering to her house just to grab something to eat before heading home, and my grandma telling us “Here! There’s apple bread just out of the oven for you to take home!” And we will grab the biggest piece that could fit into a napkin and a glass of milk for the ride.
