Cryophilic bacteria, lovers of cold, can survive

at 14 degrees F. They can survive freezing in

meat. Thermophilic bacteria, lovers of heat,

in meat which has been baked at high

temperatures can remanifest within 2 hours

after the cooking has stopped. This survival in

extreme temperatures is one of many factors in

annual food poisoning fatalities from

meat and fish.
